Summary:

This guide is designed to help early childhood educators develop a greater awareness of the special challenges involved in the nutrition and feeding concerns for children with special health care needs, and ways to approach the issues. Section 1 discusses the importance of a team approach for the development of a nutrition care plan for a child with special health care needs, and presents tools which can be used to help develop the plan. Section 2 discusses planning and preparing nutritious meals which meet the Child and Adult Care Food Program requirements. Section 3 describes ways to help a child develop oral motor skills, how food texture related to that process, and proper body positioning. The following section provides techniques that can be used to help a child learn to feed herself. Section 5 discuses ways the mealtime experience can be enhanced and integrated into the current program. Practical information on dietary modifications needed when a child has special dietary needs are provides in Section 6. The last section describes the general definition of a given disability and the nutrition and feeding problems that may be encountered. The guide closes with a list of toll-free numbers for relevant disability organizations.
